Elaine Moquette Magee MPH ’85, RD (Public Health Nutrition) presented at the super session, “Flip the Fear,” at the national conference of the National Association of College and University Food Service. Through her position as Wellness & Performance Nutritionist for Stanford University, she presented on the challenges and lessons learned around serving students with food allergies.
The fourth edition of her bestselling book, Tell Me What to Eat If I Have Diabetes, was published this year. It is written for people with prediabetes or type 2 diabetes. The new edition includes sections on mindful eating and overcoming overeating, surprising myths and truths about obesity and weight loss for people with diabetes, foods that help prevent high blood sugar when paired with foods that usually cause high blood sugar, and more.
